This month, we’re baking Pumpkin Spice Muffins — fluffy, cozy, and perfect for breakfast or an afternoon snack. These muffins are beginner-friendly, quick to make, and taste like autumn wrapped in a hug.

What You’ll Need:

  • 1 ½ cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp salt
  • 1 cup pumpkin purée
  • ½ cup sugar
  • ½ cup brown sugar
  • ⅓ cup vegetable oil
  • 2 eggs
  • 1 tsp vanilla extract

Directions:

  1. Preheat your oven to 350°F and line a muffin tin with paper liners.
  2. In a bowl, whisk flour, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, mix pumpkin purée, sugars, oil, eggs, and vanilla.
  4. Slowly add dry ingredients to wet and stir until just combined.
  5. Fill muffin cups ¾ full and bake for 20–22 minutes.

Serve warm with a pat of butter or a drizzle of maple glaze — and your kitchen will smell like fall in no time.
